Salad Shirazi A refreshing salad made with diced tomato, cucumber, onion, herbs, seasoning and finished with a splash of lemon juice. Originally from the beautiful city of Shiraz in southwestern Iran where it gets its name, it is also enjoyed as a condiment, spooned over rice and other main dishes. Suitable for vegetarians and vegansMast-o Khiyar literally means yoghurt and cucumber in Persian. Similar to an Indian raita or Greek tzatziki, it is without doubt the most popular summer starter in Iran. At Rivas we make our Mast-o Khiyar by finely grating cucumbers into smooth and creamy yoghurt, finishing off with a seasoning of salt, pepper and a sprinkling of dried mint. Equally good enjoyed as a starter, dip or as an accompaniment to our many rice dishes such as Lubiya Polo.
