The bees feed off the nectar of a single flower from Sidr trees in addition to being unprocessed, unfiltered and unheated which helps to preserve all vital live enzymes in order to retain a concentrated amount of nutrients with curative properties. They are highly sought after because of their potent medicinal properties making them one of the world’s most expensive honey. Only harvested twice a year, the bees aren’t fed sugary substances or antibiotics and are left to nature, therefore production is very limited.Our honey is taken from the comb only when fully sealed by bees. This ensures that the content is between 17% to 18% moisture. This is significant because higher moisture above 18% tends to ferment and therefore spoils. Also, honey tends to be judged based on its thickness and viscosity. It is best to let the bees reduce the moisture naturally, this adds valuable enzymes. Once sealed with a film of wax, it is then ready for harvesting. Specifically, we look at Diastase, an enzyme that is an aid for digestion.
